In a bid to preserve the originality of the dish, a restaurant owner in London took an unconventional step that is now making headlines across the globe. An Italian restaurant in London has dropped the famed carbonara pasta from its menu, citing the struggle to accommodate the different expectations of its customers.
Bottega Prelibato, an Italian restaurant in Shoreditch, has explained its decision on social media. According to reports, the restaurant was frequently asked to add cream to their carbonara pasta recipe. Requests for such modifications have not been considered because the restaurant is committed to serving real Roman-style carbonara to its customers.
The proprietor of the restaurant, Gianfillippo Mattioli, told The Telegraph that the decision was made due to the constant demands for modifications such as cream, chicken, and mushrooms.
The chefs who came from Rome became tired of diluting the famed dish’s authenticity and thus shifted their focus to more winter specials without saying when or if Carbonara would be back on the menu.
