Pastas are a staple in Italian restaurants and quite a craze among many food lovers these days. With various fusion recipes emerging every day and a range of diners incorporating them, demand for the dish is on the rise. However, with new recipes coming to the forefront, it is difficult for outlets to keep up with the authenticity and original flavours of the Italian delicacy. In a bid to preserve the originality of the dish, a restaurant owner in London took an unconventional step that is now making headlines across the globe. An Italian restaurant in London has dropped the famed carbonara pasta from its menu, citing the struggle to accommodate the different expectations of its customers.

Bottega Prelibato, an Italian restaurant in Shoreditch, has explained its decision on social media. According to reports, the restaurant was frequently asked to add cream to their carbonara pasta recipe. Requests for such modifications have not been considered because the restaurant is committed to serving real Roman-style carbonara to its customers.

The proprietor of the restaurant, Gianfillippo Mattioli, told The Telegraph that the decision was made due to the constant demands for modifications such as cream, chicken, and mushrooms.

The chefs who came from Rome became tired of diluting the famed dish’s authenticity and thus shifted their focus to more winter specials without saying when or if Carbonara would be back on the menu.

The restaurant shared its concerns on their Instagram page and addressed the ongoing struggle to meet customer demands. The social media carousel titled “Carbonara Gate,” showcased a series of negative reviews of the dish from customers. People stated that they found the dish “lacking in a lot of flavour” and that it is the “worst carbonara” they had ever had.

The restaurant wrote, “We know that many of you love our authentic carbonara, made with egg yolks, Pecorino cheese, guanciale, and black pepper. We are proud of our recipe, which follows the traditional Roman style without any cream or other additives.” However, they stated that they recognize that not everyone shares our fondness for this traditional dish. Some customers have asked us to make our carbonara using cream, mushrooms, poultry, or other things. Some thought it was too salty, while others said it wasn’t creamy enough.

It further clarified, “We respect your preferences, but we are not willing to compromise on our quality and authenticity. We hope you can understand our decision, and we appreciate your support and loyalty.”

Gianfillippo Mattioli told The Telegraph that he intends to do it the “right way” since he is from Rome. The original dish is made with egg yolks, Pecorino cheese, guanciale, and black pepper.
