Each state boasts of a delectable dish, especially the one made in a particular region, that amasses popularity across the state. Just like this, the deep fried golibaje is a sensation in Mangaluru. As per the reports of Local18, The Balli Shop at the Ratha street in Mangaluru is deemed a paradise of golibaje, also called Mangalore bajji. In a day, they reportedly end up selling over 5000 of the fried snacks. The shop was opened in 1993 at Ratha street, by Rajesh Baliga. It opens at 11 am every day, while the people queue up for hours to get their hands on the snacks. They also sell seasonal dishes like podi, pakoda, biscuit roti, cabbage podi, sanjeera, buns, golibaje, chattambade, vegetable bonda and more. The shop is now 31 years old, yet the customers throng to it regularly for the snacks.

As per the reports of Local18, the number of customers who get the food packed for home is higher. They prioritise the quality of the food, aiming to only sell the best to their customers. According to them, the food here is not too oily, which is considered a huge compliment. After 5:30 pm, the shop starts selling the fried items, ensuring high-quality food at reasonably low prices. Their cabbage bonda and sanjira have separate fanbase, while the golibaje is in another league.

The golibaje available at the Balli Shop contains over 11 ingredients, states Local18. These include pepper, cumin, black sesame seeds, oil, salt, sugar, curry leaves, green vegetables, coriander leaves, curd, maida, urad dal, soda powder and more. Golibaje tastes the best with tea.
