Eating vegetables is very beneficial for health. Vegetables contain all important nutrients that are crucial for the human body. Today we will talk about one such vegetable dish that is both healthy and tasty. The name of the vegetable is Murela. The vegetable looks similar to a bitter gourd. This dish is famous in the state of Rajasthan.
According to Ayurveda, this vegetable is even more beneficial than a bitter gourd, making it particularly good for people who are trying to control diabetes and their blood sugar levels. Let us know how can we prepare Murela vegetable at home:
First, nicely wash and clean the Murela with water. Then, cut the vegetables into small pieces. When cut, it looks very similar to bitter gourd.
After cutting, apply salt to this vegetable and leave it for at least 2 hours. This will extract its excess water, and it will also become slightly tender. Afterwards, rinse it 2 to 3 times with water again.
Now, heat the oil in a pan. Add the cut Murela and sauté it well. Sautéing enhances its flavour and ensures it cooks properly. After around 10 minutes of sautéing or once it’s 80 per cent cooked, remove it from the pan and keep it elsewhere.
Add 2 tablespoons of oil to the pan. Add half a teaspoon of cumin seeds and a pinch of asafoetida. Then add dried whole red chillies. Also, add one or two chopped green chillies. You can adjust the amount of chillies to your taste.
After that, add 2 to 3 chopped onions. Once the onions turn slightly pinkish, add dry spices like one teaspoon of coriander, half a teaspoon of black pepper, half a teaspoon of turmeric powder, and one teaspoon of fennel powder.
Stir and sauté the spices well. If you wish, you can add a little water to ensure the spices are well-cooked.
Once the spices are well cooked, add salt and one teaspoon of dried mango powder. After the spices are well blended, add the fried Murela and mix them thoroughly.
Cover the vegetables and cook for 2 to 3 minutes to allow the flavours of spices to meld well with the vegetables. Finally, add half a teaspoon of garam masala and turn off the heat. Garnish with fresh coriander and enjoy this vegetable with paratha or roti.
