The rise in popularity reflects a growing global culinary openness and a desire for diverse, authentic dining experiences. As restaurants and food establishments adapt to this trend, the infusion of Japanese and Korean flavors into the Indian food market is reshaping gastronomic preferences.

Indians exposed to international cuisines through travel and social media have developed a taste for these exotic flavors and cooking techniques. This has led to the emergence of sushi bars, Korean BBQ restaurants, and specialized eateries capitalizing on the trend. Japanese and Korean cuisine, seen as healthier options, is becoming an integral part of Indian dining. This trend promises a bright future for this segment in the Indian food industry.”

The increasing demand for Japanese cuisine in India can be attributed to several factors. One reason is the growing interest among Indian consumers in exploring international flavors and experiencing different culinary traditions.

Chef Vadim Shin, Yazu Restaurant, opines, “Japanese cuisine, known for its delicate flavors, fresh ingredients, and visually appealing presentations, has gained popularity among food enthusiasts. Additionally, globalization and international travel have exposed people to a variety of cuisines, including Japanese food. This has sparked curiosity and a desire to try Japanese dishes within India.”

Furthermore, the perception of Japanese cuisine as being healthy and balanced has also contributed to its popularity. Many Japanese dishes include nutritious ingredients such as seafood, vegetables, and tofu, which align with the increasing health-consciousness among Indian consumers.

Chef Ganesh, Koa Restaurant, says, “Both Japanese and Korean cuisines are known for their balance of flavors, emphasis on fresh and high-quality ingredients, and meticulous preparation techniques. In a health-conscious society like ours, the perception of these cuisines being healthier alternatives plays a significant role. The umami-rich profiles of Japanese dishes and the bold, spicy flavors in Korean cuisine are particularly appealing. As a chef, staying attuned to market trends is crucial. I’ve incorporated Japanese and Korean elements into my menus, that combine these flavors with local ingredients. It’s about providing a unique and exciting dining experience that resonates with the evolving tastes of my customers.”

To cater to the rising demand, several Japanese restaurants and food chains have expanded their presence in India’s major cities. This has made Japanese cuisine more accessible to a wider audience, leading to its growing popularity.

For Head Chef Feroz Khan, Cray Craft restaurant, the culture of Korean food involves high consumption of vegetables, moderate to high consumption of legumes and fish and low consumption of red meat. “Food is integral to most of the narratives in Korean dramas and visiting restaurants that serve Korean cuisine has become a popular choice among Indian fans of K-pop. Korean food is now quite popular in tier-one Indian cities where a large number of people have high incomes and are aware of its existence,” adds Khan.

Increased travel, social media and curiosity have contributed to a heightened interest in it. Additionally, the impact that anime series have had most of which have a strong focus on food has led to younger diners exploring popular Japanese dishes in recent years. Japanese has always been famous for its unique approach to gastronomy, combining a world of exotic ingredients and aromatic spices to create truly inspiring dishes and in addition Japanese cuisine is known for being as pleasing to the eye as it is to plate.
