THIRUVANANTHAPURAM: How about having some tapioca mushroom biriyani? With cookery shows aplenty, people have taken on a penchant for experimenting when it comes to cooking. While everyone is familiar with varieties of biriyani made with beef, fish and other ingredients, a dash of mushroom can be a delectable surprise on your dinner table.Chopped mushrooms saute in hot oil and mixed with chicken masala and other ingredients along with carrot, beans and chopped tapioca can give you a nutritional and tasty dish. Those who are accustomed to hot and spicy food is sure to please their palate for the dish. The other delicacies made out of mushrooms are pickles, chutney powder, Mushroom Puffs, Malaysian mushroom coffee, mushroom payasam, soups and tikka. The pickle made of oyster and milky mushrooms is prepared by adding vinegar and gingelly oil and has a shelf life of three months.Those fond of experimenting in the kitchen can borrow some ideas for festival recipes. If you are tired of making the same old traditional payasam recipes you can try out mushroom payasam for a tasteful change. The ingredients used for the preparation of mushroom payasam is quite similar to that of Ada payasam or rice payasam. To add to the fun, very often you get to chew on creamy bits of mushroom while devouring the payasam.The freshly picked mushrooms are prepared into these dishes under the guidance of Swami Janamohana Njanathapaswi.  You can get a  taste of all these delicacies in the Mushroom pavilion at the ongoing Santhigiri Fest at Santhigiri Ashram, Pothencode.For Rs 15, you get a glass full of mushroom payasam, with crunchy nuts and raisins in it. A hundred gram packet of mushroom pickle costs Rs.35 while the take away biriyani comes at Rs.50.Mushrooms though comes under the category of fungi, has got its share of nutritional value. It helps in controlling sugar level in human body. “It is fat free and high in fibre. An intake of mushrooms atleast thrice a week will be beneficial for good health,” says R Rajan, in-charge of the stall at the fest.
