Dried fruits are expensive and many of us receive them as gifts for the festive season. Though delicious to eat, these fruits are often chewy and get stuck in the teeth due to their fibrous nature. What do you really do when you have a large box of prunes, apricots, pears, dates or peaches? Just have a  fruit compote for that instant body building effect!Ingredients 1¼ prunes1 cup dried apricots¾ cup dried peaches1/3 dates1 vanilla bean, halved1 tsp julienne orange zest½ cup sugar2 tsp rose water1 cup plain low fat yoghurtMethod:Rinse the prunes, apricots and peaches and place in a large saucepan with four cups of water. Add the dates, vanilla bean and the orange zest and slowly bring to a boil. Keep the lid partly covered for five minutes. Now fully cover and simmer for another seven minutes. Add the sugar and stir until dissolved. Cook and simmer for a further 15 minutes over low flame and allow it to cool.  Add the rose water to the fruit and refrigerate for a couple of hours before serving with low fat yoghurt. The energy that you get is almost instant. This diet is highly recommended to lift your mood if you are going through depression or to ease that jet lag.
